The kitchen knives from the Alpha series of Güde are ice hardened and in German tradition made of chrome-vanadium-molybdenum steel. This steel is hardened to a hardness of about 56 HRC. According to Güde, through this process you reach an optimal combination of hardness, sharpness preservation, sharpening possitibilities and resistance to chipping (breaking off pieces of steel). The forged knives are, for a great extent, hand made and sharpened.
The handles are made of highly durable Hostaform. Thanks to this Hostaform (similar to POM) the knives of the Alpha series can be cleaned in the dishwasher now. Still we advise not to do this, as the inevitable clashing inside the dishwasher may have consequences for the edge. The handle is riveted with three rivets between the unique double bolster of each knife. This double bolster gives the knife the balance which is needed to use it for a comfortably for a long time.
