The Kai Shun Premier Tim Mälzer carving knife 24 cm was designed by top chef Tim Mälzer. The knife is enhanced with a long, narrow blade and a fine edge. Perfect to cut any type of meat. Because of the narrow blade the meat won’t stick to the blade as you cut it. Because of the length you are able to make long, straight cutting movements. When cutting use the entire length of the blade and cut through in one go.
The Kai Tim Mälzer knives are enhanced with KAI’s famous damask layered metal structure, combined with a very strong core of VG10 steel. The core of the blade is on the outside enhanced with 32 layers of stainless damask steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut wood and feels very comfortable in hand.
